HEALTH HACK | GF DF PUMPKIN MUFFINS

Cue Hocus Pocus and cozy sweaters. Daylight savings is now around the corner, grocery stores are now selling pumpkins, PSLs are back. All is right in the world πŸŽƒ

It’s also becoming a little easier to get some exercise in before the holidays! Cooler weather allows for more outdoor exercise like hiking and morning jogs and we have a pumpkin themed muffin to keep you nourished!

Ingredients:

β€’ 1 1/2 cups GF flour

β€’ 1 cup monk fruit

β€’ 1 tbsp pumpkin pie spice

β€’ 1 tsp baking powder

β€’ 1 tsp salt

β€’ 1 1/4 cup canned pumpkin

β€’ 2 eggs

β€’ 1/3 cup olive oil

Preheat oven to 350 and line a muffin pan. Combine all dry ingredients thoroughly in one bowl. Combine all wet ingredients in a separate bowl. Add dry ingredients to wet and mix thoroughly. Once mixed pour an even amount in each muffin space.

Bake for 20-25 mins.
