HEALTH HACK | GF DF PUMPKIN MUFFINS
Cue Hocus Pocus and cozy sweaters. Daylight savings is now around the corner, grocery stores are now selling pumpkins, PSLs are back. All is right in the world 🎃
It’s also becoming a little easier to get some exercise in before the holidays! Cooler weather allows for more outdoor exercise like hiking and morning jogs and we have a pumpkin themed muffin to keep you nourished!
• 1 1/2 cups GF flour
• 1 cup monk fruit
• 1 tbsp pumpkin pie spice
• 1 tsp baking powder
• 1 tsp salt
• 1 1/4 cup canned pumpkin
• 2 eggs
• 1/3 cup olive oil
Preheat oven to 350 and line a muffin pan. Combine all dry ingredients thoroughly in one bowl. Combine all wet ingredients in a separate bowl. Add dry ingredients to wet and mix thoroughly. Once mixed pour an even amount in each muffin space.
Bake for 20-25 mins.
