HEALTH HACK | Paleo Protein Banana Bread

One of the greatest things about a muffin and coffee for breakfast or a croissant and coffee is yes it’s delicious, but it’s also fast and easy. You can eat it in your car as you’re rushing to work with your latte for a delicious combo.

Unfortunately you’re probably totally crashing by lunchtime and more inclined to crave sugar or caffeine to combat those feelings throughout the day.

It’s not always possible to cook yourself an entire breakfast every morning - we get that. So we decided to find your healthy alternative to that easy grabbable morning muffin. You can make it ahead of time and grab and eat on the go!

Ingredients:

1 ripe banana, mashed

2 large eggs

1/4 cup egg whites

1/2 cup almond milk

1/2 tsp vanilla extract

3 scoops plant Protein Powder

1/2 cup Bob’s Red Mill Paleo Baking Flour (firmly packed)

1/2 tsp baking powder

1/2 tsp cinnamon

Pinch of salt

Instructions:

Preheat oven to 350 degrees F and combine all wet ingredients in a medium sized mixing bowl. Stir well.

Combine all dry ingredients in a separate mixing bowl. Stir well.

Gradually stir the dry ingredients into wet ingredients.

Pour batter into a pre greased muffin tin and place pan in oven.

Bake at 350 degrees for 25 minutes or until a toothpick can be inserted and comes out cleanly.
