HEALTH HACK | PUMPKIN ENERGY BITES
With Halloween just around the corner, it was impossible to avoid another pumpkin flavored food! Here are some fast healthy fall themed bites you can grab and go before maybe some pumpkin carving or cider sipping!
3/4 cup creamy almond butter
1/2 cup pumpkin puree
1 1/4 cups old-fashioned oats
1/2 cup ground flax seeds
3 tablespoons honey
Mix all ingredients thoroughly until smooth! Refrigerate for 2 hours in order to make them easier to roll.
Using a spoon, scoop 12-14 balls out and place on parchment paper or cookie sheet. Refrigerate again to solidify for another 2 hours and serve!
